Year 10 Food Preparation and Nutrition
Year 10 Recipe Suggestions
To assist some students in finding recipes to meet the lesson criteria I have added some website links to this page which I hope will support them in getting started. Please note these are simply suggestions and I would ideally like students to get used to researching their own recipes as this is a skill they will need for Year 11.
You will notice I have used BBC Good Food as my resource for these recipes, this is because they are tested recipes which use UK measurements rather than US cups. I have lots of recipe books in DT4 which students are always welcome to use. The main protein in many of these dishes may not suit everyone tastes but can be adjusted to another meat, meat substitute (Quorn, Tofu etc) or fish.
Cooking a dish with protein complementation and different methods of heat transfer
- Thai salmon kebabs, add a rice salad to this to meet the criteria:

Layered Dessert
Students will have two lessons to complete this dessert to allow for the lower layers to set. The aim is for students to prepare a layer set with gelatine so cheesecakes fit this perfectly. Students may wish to bring in moulds or tart tins from home, as well as a container to carry it home in.
- Triple berry cheesecake, make your own biscuits for the bottom layer to add skills https://www.bbcgoodfood.com/recipes/triple-layered-berry-cheesecake

Cook a Tart
For this cook I would like to see students make their own pastry and show some precision in presenting their tart. It can sweet or savoury but should have a set filling.
Tarte Tatin – this recipe takes a whole lesson so puff pastry would need to be prepared at home https://www.bbcgoodfood.com/recipes/tarte-tatin

For the students last cook of the year they can cook anything they would like however I would like to see some of the skills they have developed this year. Please remember there is no expectation for students to have the most expensive ingredients and my spice cupboard is open for them to check anything they might need. Students who receive free school meals need to let me know they ingredient list along with quantities on the Wednesday before the cook to avoid disappointment.
